Treats Don’t Need To Be Cheats
Pancake Day is right around the corner and what better way to celebrate than with these delicious recipes that you can enjoy guilt free - remember, treats don’t need to be cheats!
Below we have a regular pancake recipe, as well as a gluten and dairy-free option; both of which can be enjoyed without fear of affecting your progress and as an excellent pre or post-workout snack!
Fluffy Pancake Recipe
Cook Time: 10 minutes
Total Time: 15 minutes
Serves: 6 full-size pancakes
Ingredients:
- 1 organic free range egg
- 200g plain flour
- 300ml semi-skimmed milk
- 1 tbsp baking soda
- 1 tbsp caster sugar
Method:
- Whisk all ingredients until there are no lumps.
- Drop batter by spoon onto a lightly greased pan until 1 side bubbles. Flip pancakes and cook until golden brown.
- Prepare the night before, cover and chill overnight to save time in the morning.
- Serve
- Top with fresh fruit and berries, or mix in with the batter (goji berries are good mixed with the batter).
For those of you more interested in a traditional crêpe, just take away the baking soda and caster sugar from the recipe.
Gluten and Dairy-Free Pancake Recipe
Cook Time: 15 minutes
Total Time: 20 minutes
Serves: 18 mini pancakes
Ingredients:
- 2 organic free range eggs
- 1⁄2 teaspoon gluten-free baking powder
- 1 teaspoon cinnamon (optional)
- 60ml water
- Sprinkle of sea salt
- 180g rice flour
- 150ml plain, active-culture yoghurt (dairy free)
Method:
- Whisk all ingredients until there are no lumps.
- Drop batter by spoon onto a lightly greased pan until 1 side bubbles. Flip pancakes and cook until golden brown.
- Prepare the night before, cover and chill overnight to save time in the morning.
- Serve
- Top with fresh fruit and berries, or mix in with the batter (goji berries are good mixed with the batter).
